Heyyyyy guys!

So I love salads and I love quinoa and it’s my love for these two that inspired this recipe.

I really love the way this quinoa salad turned out, because it has multiple flavors that really compliment eachother to create a fresh nutrient dense dish that is perfect for lunch or dinner.

Not only is it great to have bursting bold flavors, but look how pretty it is. The colors are incredible. It really makes me appreciate eating it.


Quinoa (cooked)
Yellow peppers
Cherry tomatoes
Green olives
Artichoke hearts (from jar)
Goat cheese
Salt & Pepper
Olive Oil


Let’s get started on this delicious quinoa salad!

You want to start by cooking about 1 cup of quiona. While it’s cooking start chopping up all the veggies.

Everything is fresh minus the artichoke hearts. While I love fresh ones there is something to be said about a jarred artichoke heart in olive oil, herbs and spice. Yum!

Now you want to saute the spinach. I use a small amount of olive oil in the bottom of a pan with some minced garlic. Let the garlic simmer in the oil for about two minutes before adding the spinach. That way the spinach can absorb all that flavor.

Once the quinoa is finished you want to allow it to cool for about 15-20 mins.

Place the quinoa in a bowl and top with fresh veggies, artichoke hearts, sauteed spinach.

Finish the salad off with salt & pepper to taste, a drizzle of lemon and some fresh goat cheese.

It’s so simple and loaded with yummy ingredients to keep you full and give you vitamins and nutrients your body deserves.
